There's the Earth dragonballs which summon the great dragon Shenron (aka Shenlong) and grant 1 wish (can't wish for him to kill anything). Can be used to wish multiple people back to life with only 1 wish (even an entire planet worth) but can not wish the same person back twice.They turn to stone after a wish is made and scatter themselves around the world. They stay stones for one year after a wish is made. They are small in size.
There's the Namekian dragonballs which summon the great dragon Porunga and grant 3 wishes (I don't recall if it was ever explained why he can grant 3 while Shenron can only grant 1, also can't wish to kill anything). Can only bring 1 person back to life per wish but can wish the same person back to life any number of times. They also turn to stone and scatter after a wish is made but can be used again after 6 months (which is 1 Namekian year). They are a lot larger than Earth dragonballs (an obvious compensation for the Namekian's lack of genitalia).
And then there's the black-star dragonballs...they summon Ultimate Shenron. They can grant any 1 wish (including killing). Any wish made is so powerful that only another wish from the black-star dragonballs can reverse it. They do not turn to stone after a wish is made, they simply scatter across the GALAXY (so you can wish just as fast as you can gather them again). The down side is that if the balls are not gathered within a year of the last wish being made then the planet where the wish was made will explode.
There's likely more differences than that but someone else can add to this. i'm done, lol.

D*mn, that's an excellent explanation. I guess all I can really add is:
Earth Dragon Balls. Kami made these ones IIRC. Also, in addition to not being able to kill, you can't make someone love you or wish for something you already did. They can also only be wished back to life if they die of unnatural causes. When Dende restored these later on, you were able to get three wishes instead of just one.
Namekian Dragon Balls. Grand Elder Guru guy is the one who made these. You also had to say some kinda command in Namekian in order for them to work.
Black Star Dragon Balls. Don't remember who created these...a Namekian IIRC. Don't quote me on that tho. Also, the absolute WORST thing to ever happen in GT occurred because of these things. Absolutely awful ;___;
