Why do they keep rebooting the series'? There are much more to these characters than their origin stories. I'd love to see them carry some of these guys through and do the amazing story arcs from the comics. There is so much good material that has never seen the light of day.
Well, there are quite a few factors, I'd assume, like...
1. Most of the people that watch these movies probably don't know anything/much of the character in question (barring like Spidey and Batman, talking more Iron Man or Punisher or Thor), so an origin story's a great place to get started. Inform viewers of the character, plus it makes for a solid movie formula -> Dude gets powers -> Conflict arises -> Dude has to use powers to help -> Big villain -> Victory dance, etc
2. A lot of these movies just popped up recently (like Iron Man, Cap, Thor, etc), so an origin story was pretty much expected, and completely natural. Though I'm guessing your complaint is aimed more at Amazing Spider-Man and Batman Begins and those sorts. I guess their reasoning is that, since they're starting over with a new cast and direction, they might as well go the origin story route
3. I honestly see the more interesting stories coming into fruition soon (at least from Marvel Films). Iron Man seems to be heading in that direction, along with the upcoming Ant-Man and Guardians movies to shape Avengers into that as well. Who knows?

So we've got Iron Man 3, Amazing Spider-Man 2, Thor 2, Cap 2, Ant-Man, Guardians of the Galaxy, Man of Steel, Justice League rumors, Avengers 2...
Holy the the the the this is awesome
While I'm not a big fan of the design of the suit in IM3, I'm sure the movie'll be great. I really like the direction of story that they're going, and there's a chance that Pepper might suit up and be Rescue! That'd be awesome!. Hyped as the the the the for this.
I'm positive TAS 2 will be fantastic, although not so sure how it'll fare against the original. I'm guessing it'll surpass it, tbh. Jamie Foxx as Electro was kinda weird, but I like it. Excited to see Electro in action, really. Plus with MJ and Harry rumored to be coming into the story, I'm REALLY interested in a TAS 3.
Guardians of the Galaxy...ROCKET RACCOON!
Not the biggest Supes fan, but Man of Steel looks like it'll be pretty good.
While I love JGL, I'm not completely sold on him playing Bats. I mean...I wasn't really down with Bale either (or the Nolan movies in general), but...oh well. Hyped for a JL movie.
Avengers 2 will be great I'm sure.

Yeah man, after watching TAS for the second time, I'm totally excited for TAS2. Garfield is a way better fit than Mcguire ever was. I was skeptical for Stone as Gwen Stacy, but she definitely exceeded my expectation. I would love to see some form of the Sinister Six, but that doesn't seem viable for a two, three hour movie.

We’ve done photography with them, I’ve played with racoons, and fed racoons, and dealt a lot with real racoons to get some of the behaviour down, because it’s really, really important to me that Rocket Racoon, who is the heart of the movie, is not a cartoon character, it’s not Bugs Bunny in the middle of The Avengers, it’s a real, little, somewhat mangled beast that’s alone. There’s no one else in the universe quite like him, he’s been created by these guys to be a mean-こし fighting machine.
